Carotenoids are produced by photosynthetic and enzymatic reactions within microorganisms and plants. The carotenoids actually contribute the bright yellow, orange, and red colors to flowers, plants, and fruit. Predominantly used as food colorants, they find extensive use in nutraceutical, cosmetics, pharmaceutical and animal food industries.
